DescriptionThe "Certificat de dégustateur" is entirely devoted to the tasting of Burgundy wines. Three dense days with numerous practical exercises to enter the fascinating world of Burgundy wines.
With glass in hand, you'll be introduced to the basics of sensory analysis, tasting methodology and techniques, with the aim of learning to look, smell, taste, comment on and identify the main organoleptic characteristics of Burgundy white and red wines, not forgetting Crémant.

This course is open to everyone, from professionals and employees in the Burgundy wine industry to wine enthusiasts with a basic knowledge of wines who wish to go further in learning and discovering Burgundy wines through tasting.

Preparation for the Certificat Professionnel d'Analyse Sensorielle des Vins de Bourgogne.
The course and visits are led by a trainer from the Ecole des vins. Each course is subject to a satisfaction survey via a questionnaire given to each participant at the end of the session. These questionnaires are carefully studied to analyze the strengths and weaknesses of our training courses. Based on the results, actions are taken to improve content and optimize objectives. An overall grade is also given by the participants.

Tuesday program

- Visual, olfactory and gustatory examinations Balance, length on the palate, ageing potential
- Tasting red Burgundy wines
- Basics of vinification and ageing of red Burgundy wines
12:30 Lunch tasting in a Côte viticole restaurant
14:30 Landscape reading in the Grands Crus of the Colline de Corton (the notion of terroir and vine cultivation)
15:30 Tasting white Burgundy wines (basic notions of vinification and ageing of white Burgundy wines).
17:30 End of the second day. Evening at leisure.

Wednesday program
 9:00 Visit to a cooperage and barrel-making tour
11:00 Visit and tasting at a Côte de Beaune winery
12:30 Lunch tasting in a Beaune restaurant
 
15:00 Wine service:
- Workshop on glass selection with commented tasting
- Workshop on wine serving temperature with guided tasting
- Workshop on decanting white and red wines with guided tasting
 
17:00 Tasting of Burgundy sparkling wines
